Pasta

Method

Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

  2. 2

    Prepare the Vegetables

While the pasta is cooking, wash and chop the bell peppers, zucchini, cherry tomatoes, carrot, and broccoli into bite-sized pieces.

Cooking

  1. 3

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the chopped vegetables and sauté for 5-7 minutes, stirring occasionally until they are tender but still crisp.

  2. 4

    Combine Pasta and Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine, adding a bit of reserved pasta water if needed to help the ingredients mix together.

  3. 5

    Season and Serve

Season with salt and black pepper, toss in the grated Parmesan cheese and chopped fresh basil, and mix well. Serve immediately while hot.
