Chicken and Marinade

Toppings

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a blender, combine the habanero peppers (seeded for less heat if desired), honey, soy sauce, olive oil, minced garlic cloves, salt, and black pepper. Blend until smooth.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a bowl or resealable plastic bag. Pour the habanero marinade over the chicken, ensuring it is well-coated. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

Cooking the Chicken

  1. 3

    Cook the Chicken

Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F (75°C).

  2. 4

    Add Toppings

During the last few minutes of grilling, place a slice of Swiss cheese on each chicken breast to melt. Also, grill the pineapple slices for about 2-3 minutes on each side until caramelized.

Assembling the Sandwich

  1. 5

    Prepare the Bacon and Onion

In a skillet, cook the bacon until crispy. Remove and place on paper towels to drain. Slice the red onion into thin rings.

  2. 6

    Build the Sandwich

On each Ozark natural bun, layer the grilled chicken with melted Swiss cheese, a slice of grilled pineapple, crispy bacon, and red onion rings. Top with the other half of the bun.
