Beef Preparation

Season and Roast the Beef
Preheat your oven to 300°F (150°C). Season the beef roast with salt, black pepper, garlic powder, and onion powder. Place the seasoned beef in a roasting pan.

Roasting
Roast the beef in the preheated oven for about 2 to 3 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Baste occasionally with beef broth.

Once done, remove the beef from the oven and let it rest for at least 15 minutes before slicing thinly.

Sauté the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with salt and sugar.

Caramelizing
Cook the onions, stirring frequently, for about 20-25 minutes until they are soft and caramelized. Set aside.
Making Horseradish Aioli

Mix the Ingredients
In a small bowl, combine the mayonnaise, prepared horseradish, lemon juice, and minced garlic. Stir until well mixed.

Assemble the Sandwiches
Slice the French bread rolls in half. Layer the bottom half with the sliced beef, caramelized onions, and Swiss cheese.

Melt the Cheese
Place the assembled sandwiches in a preheated oven (or use a broiler) for about 5 minutes, or until the cheese is melted.

Serve with Au Jus
Serve the sandwiches hot, alongside a small bowl of warmed beef broth as au jus for dipping. Add a dollop of horseradish aioli on the side.
