Toffee Sauce

Method

Pudding

  1. 1

    Prepare the Dates

Chop the pitted dates and place them in a bowl. Pour the boiling water over the dates and let them soak for about 15 minutes until softened.

  2. 2

    Cream Butter and Sugar

In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy, about 3-5 minutes.

  3. 3

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

  4. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. 5

    Mix Batter

Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the soaked dates along with the soaking liquid.

  6. 6

    Bake the Pudding

Pour the batter into a greased baking dish and bake in a preheated oven at 180°C (350°F) for 30-35 minutes or until a toothpick comes out clean.

Toffee Sauce

  1. 7

    Melt Butter and Sugar

In a saucepan over medium heat, melt the unsalted butter with the brown sugar, stirring continuously until the sugar dissolves.

  2. 8

    Add Cream and Whiskey

Once the butter and sugar are combined, slowly stir in the heavy cream and Old Grandad whiskey. Bring the mixture to a gentle boil and allow to simmer for about 5 minutes, stirring occasionally.

  3. 9

    Thicken the Sauce

Continue to simmer until the sauce has thickened slightly. Remove from heat and let it cool slightly before serving.
