Stack the corn tortillas and cut them into wedges (like a pizza) to form chips.

In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the tortilla wedges to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Remove the chips from the oil and drain them on paper towels. While they are still hot, sprinkle with salt to taste.

In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, chopped cilantro, lime juice, and salt. Stir until well mixed.
