Prepare the Filling
In a mixing bowl, combine the cooked and shredded chicken, finely chopped onion, diced green chili, sliced pepperoncinis, and shredded American cheese. Mix well until all ingredients are evenly distributed.

Fill the Wontons
Place a wonton wrapper on a flat surface. Spoon about 1 tablespoon of the filling mixture into the center of the wrapper. Moisten the edges of the wrapper with water and fold it over to create a triangle, sealing the edges tightly. Repeat with remaining wrappers and filling.

Make the Aioli
In a small bowl, combine the mayonnaise, minced chipotle peppers, lime juice, minced garlic, and salt. Mix until smooth and well combined. Adjust seasoning to taste.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add a few wontons to the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes or until golden brown, turning occasionally for even cooking. Remove with a slotted spoon and drain on paper towels.
