Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until well combined.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, or until golden brown. Remove from the oven and let it cool.

Prepare the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the granulated sugar, sour cream, and vanilla extract, mixing until fully combined.

Add the eggs
Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

Pour into crust
Pour the filling into the cooled crust, smoothing the top with a spatula.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for an hour.

Remove from the oven and refrigerate for at least 4 hours, or overnight.

Prepare the berry topping
In a medium bowl, toss the mixed fresh berries with powdered sugar. Let it sit for about 15 minutes to release their juices.

Once the cheesecake is chilled, remove it from the springform pan and top with the berry mixture just before serving.
