Method

Preparing the Fries

    Cut and Soak Potatoes

    Wash and cut the Russet potatoes into fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

    Heat Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry with paper towels. Fry the potatoes in batches for about 5-7 minutes until golden brown and crispy. Remove from the oil and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.

Making the Beer Cheese

    Combine Ingredients

    In a medium saucepan over medium heat, combine the sharp cheddar cheese, cream cheese, beer, garlic powder, onion powder, paprika, and black pepper.

    Melt and Stir

    Stir the mixture continuously until the cheese is melted and smooth, about 5-7 minutes. Remove from heat and set aside.

Assembling the Dish

    Cook the Bacon

    In a skillet, cook the bacon slices over medium heat until crispy. Remove and drain on paper towels, then crumble into small pieces.

    Prepare Scallions

    Chop the scallions into thin slices, using both the green and white parts.

    Layer the Fries

    On a large serving platter or baking sheet, layer the hot fries, then pour the warm beer cheese over the top.

    Add Toppings

    Sprinkle the crumbled bacon and chopped scallions over the cheese-covered fries. Drizzle with buffalo sauce to taste.

    Serve immediately while the cheese is warm and gooey.
