Prepare the Steak
Season the filet mignon generously with salt and coarse black pepper on all sides.

Cook the Steak
In a large skillet, heat the olive oil over medium-high heat. Add the filet mignon and sear for about 4 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest.

Make the Sauce
In the same skillet, reduce the heat to medium and add butter. Once melted, add the shallots and sauté until soft. Carefully add the brandy, scraping up any browned bits, and let it reduce for 2-3 minutes. Stir in the heavy cream and simmer until the sauce thickens slightly.

Serve
Slice the steak and pour the sauce over it before serving.

Prepare the Fries
Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and rosemary in a large bowl.

Bake the Fries
Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Serve
Serve the fries hot alongside the steak.
