Cider Making Process

    Prepare the Juice

    In a large bowl, combine the fresh apple juice and water. Stir well to mix. If you have a hydrometer, take a reading to know the sugar content.

    Sterilize Equipment

    Crush the Campden tablet and dissolve it in a small amount of water. Add this solution to the juice mixture to kill any wild yeast or bacteria. Let it sit for 24 hours.

    Add Yeast and Enzymes

    After 24 hours, add the dried cider yeast and pectic enzyme to the juice. Stir gently to combine.

    Fermentation

    Transfer the mixture to a fermentation vessel, ensuring there is enough headspace. Seal with an airlock. Allow the cider to ferment in a cool, dark place for about 1-2 weeks, or until fermentation has stopped (no more bubbles in the airlock).

    Bottling

    Once fermentation is complete, siphon the cider into clean bottles, leaving some space at the top. If desired, add sugar to taste for carbonation. Seal the bottles.

    Aging

    Store the bottles in a cool, dark place for at least 2-3 weeks to allow flavors to develop. Chill before serving.
