Burger Preparation

    Prepare the Patties

    In a mixing bowl, combine ground beef, salt, and black pepper. Form into two equal patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    In the last minute of cooking, place a slice of Swiss cheese on each patty and cover to melt.

    Toast the Buns

    Lightly toast the brioche buns on the grill or skillet until golden brown.

    Place the cheeseburger on the bottom bun, top with caramelized onions, and drizzle with 48-hour jus before adding the top bun.

    Peel and cut the russet potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch.
