Burger Preparation

Prepare the Patties
In a mixing bowl, combine ground beef, salt, and black pepper. Form into two equal patties.

Add Cheese
In the last minute of cooking, place a slice of Swiss cheese on each patty and cover to melt.

Assemble the Burger
Place the cheeseburger on the bottom bun, top with caramelized onions, and drizzle with 48-hour jus before adding the top bun.

Prepare the Potatoes
Peel and cut the russet potatoes into thin strips. Soak in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the potatoes and pat them dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the potatoes in batches until golden brown and crispy, about 3-4 minutes per batch.

Remove fries from the oil and drain on paper towels. Immediately sprinkle with salt while hot.
