Prepare the Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, combine the mayonnaise, chipotle peppers, and lime juice. Mix well until smooth. Adjust seasoning to taste and set aside.

Prepare the Salsa
Once cooled, peel the skins off the hatch chiles and remove the seeds. Dice the chiles and place them in a bowl. Add the diced tomatoes, finely chopped onion, cilantro, salt, and lime juice. Stir to combine and set aside.
Cook the Burger

Form the Patties
In a large bowl, mix the ground beef with salt and black pepper. Divide the mixture into four equal portions and shape into patties.

Cook the Patties
Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side until browned. Flip the patties, place a slice of American cheese on each, and cook for another 3-4 minutes until the cheese is melted and the burgers are cooked to your desired doneness.
Assemble the Burgers

Build the Smash Burger
Toast the burger buns lightly on the grill or in a toaster. Spread a generous amount of chipotle mayo on the bottom half of each bun. Place the cooked burger patty on top, followed by a spoonful of hatch chile salsa. Top with the other half of the bun and serve immediately.
