Method

Making Cottage Cheese

  1. 1

    Heat the Milk

Pour the milk into a large saucepan and heat over medium heat. Stir occasionally to prevent scorching. Heat the milk until it reaches about 190°F (88°C).

  2. 2

    Add Vinegar

Once the milk reaches 190°F, remove it from heat. Slowly add the white vinegar while gently stirring the milk. You should see the curds start to form as the milk separates.

  3. 3

    Let It Sit

Cover the saucepan and let the mixture sit for about 5-10 minutes to allow the curds to fully form.

  4. 4

    Strain the Curds

Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the colander to separate the curds from the whey.

  5. 5

    Rinse the Curds

Rinse the curds under cold water to remove any remaining whey and vinegar. This helps to cool the curds and wash away any sour taste.

  6. 6

    Season the Curds

Transfer the rinsed curds to a bowl. Add salt and any optional flavorings like chives, black pepper, or garlic powder. Mix gently to combine.
