Add Vinegar
Once the milk reaches the desired temperature, remove it from the heat. Stir in the white vinegar slowly, mixing well. Let it sit for 5-10 minutes until the curds form.

Dissolve the rennet tablet in a small amount of cool, non-chlorinated water. Stir the rennet into the curds gently and let it sit undisturbed for another 5-10 minutes until the curds have fully formed and separated from the whey.

Using a slotted spoon, cut the curds into 1-inch cubes. Let them sit for an additional 5 minutes.

Return the pot to low heat and gently cook the curds for about 5-10 minutes, stirring occasionally. The curds should become firmer and start to release more whey.

Line a large bowl with cheese cloth and pour the curds into the cloth. Gather the edges of the cloth and squeeze out as much whey as possible.
