Method

Biscuits

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine 2 cups all-purpose flour, 1 tablespoon baking powder, and 1 teaspoon salt.

  3. 3

    Cut in Butter

Add 1 tablespoon of unsalted butter to the dry mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs.

  4. 4

    Add Milk and Cream

Pour in 3 tablespoons of whole milk and 1 cup of heavy cream. Stir gently until just combined; do not overmix.

  5. 5

    Shape Biscuits

Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch thick. Cut out biscuits using a biscuit cutter or a glass.

  6. 6

    Bake

Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Gravy

  1. 7

    Cook Sausage

In a large skillet over medium heat, crumble and cook 1 pound of ground sausage until browned and fully cooked.

  2. 8

    Make Roux

Sprinkle 1 tablespoon of all-purpose flour over the sausage and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

  3. 9

    Add Milk

Slowly pour in 2 cups of whole milk, stirring constantly to avoid lumps.

  4. 10

    Season

Add 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cayenne pepper. Stir well and let the gravy simmer until thickened, about 5-7 minutes.

  5. 11

    Serve

Serve the hot sausage gravy over warm biscuits.
