Prepare the Strawberries
Wash and slice the fresh strawberries. Toss them with 2 tablespoons of powdered sugar and let them sit for about 30 minutes to macerate.

Make the Shortcake
Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Mix in the Cream
Stir in the heavy cream and vanilla extract until just combined. Do not overmix.

Shape and Bake
Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut into squares or rounds and place them on a lined baking sheet. Bake for 15-20 minutes or until golden brown.

Once the shortcakes are baked, let them cool slightly. Split them in half horizontally, layer with macerated strawberries, and top with whipped cream or additional strawberries.
