Mousse Preparation

Melt the White Chocolate
Chop the white chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Allow to cool slightly.

Whip the Heavy Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Beat the Egg Whites
In another clean bowl, beat the egg whites and a pinch of salt until frothy. Gradually add granulated sugar and continue to beat until stiff peaks form.

Gently fold the melted chocolate and vanilla extract into the whipped cream until fully combined. Then, gently fold in the egg whites, taking care to keep the mixture light and airy.
