Prepare the Filling
In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Add sliced mushrooms and cook until they are softened, about 5 minutes. Stir in fresh spinach and cook until wilted. Add diced roma tomatoes and cook for an additional 2 minutes. Remove from heat and let cool slightly.

Mix the Cheese
In a bowl, combine ricotta cheese, shredded mozzarella, shredded provolone, salt, black pepper, and Italian seasoning. Add the cooled vegetable mixture and stir until well combined.

Prepare the Calzone Dough
Preheat your oven to 475°F (245°C). Roll out pizza dough on a lightly floured surface into circles, about 8 inches in diameter.

Assemble the Calzones
Place a generous amount of the veggie and cheese filling on one half of the dough circle. Fold the other half over the filling and pinch the edges to seal. Use a fork to crimp the edges and ensure they are tightly sealed.

Bake
Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool for a few minutes before serving.
