Prepare the Ingredients
Slice the galangal root, chop the tomatoes, and slice the green onions. If using chicken, cut it into bite-sized pieces.

Cook the Base
In a large pot, bring 2 cups of water to a boil. Add the galangal slices and kaffir lime leaves. Simmer for about 5 minutes to infuse the flavors.

Add Chicken or Shrimp
Add the chicken or shrimp to the pot and cook until the chicken is cooked through or the shrimp turns pink.

Add Vegetables and Coconut Milk
Stir in the chopped tomatoes and green onions, then pour in the coconut milk. Bring to a gentle simmer.

Season the Soup
Add the lime juice, fish sauce, and sugar. Stir well and let it simmer for another 5 minutes.
