Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into thin strips. Pan-fry the tofu in a little oil until golden brown on all sides. Set aside.

Cook the Rice Noodles
Cook the rice noodles according to package instructions. Drain and rinse with cold water to prevent sticking.

Assemble the Spring Rolls
Soak a rice paper wrapper in warm water for 10-15 seconds until pliable. Lay it flat and place a few pieces of tofu, a small handful of rice noodles, lettuce, carrot, cucumber, mint, and cilantro in the center. Fold the sides over and roll tightly from the bottom up.

Make the Dipping Sauce
In a small bowl, whisk together soy sauce, peanut butter, lime juice, water, sugar, and chili flakes until smooth.

Serve the spring rolls with the peanut dipping sauce on the side.
