Slow Cook the Roast
Season the chuck roast with salt and pepper. Place it in a slow cooker, add a little olive oil, and cook on low for 8 hours or until tender.

Cook the Bacon
In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

Prepare the Egg Salad
Hard boil the eggs by placing them in a pot of water. Bring to a boil, then cover and remove from heat for 10-12 minutes. Cool, peel, and chop the eggs. In a bowl, combine chopped eggs, mayonnaise, Dijon mustard, salt, and pepper.

Assemble the Lulu
Once the roast is done, slice it thinly. On a plate, layer lettuce, sliced roast beef, bacon, egg salad, and shredded cheddar cheese. Top with slices of tomato. Serve with bread if desired.
