Prepare the Fish Mixture
In a food processor, combine the white fish fillets, red curry paste, green beans, fresh coriander, egg, rice flour, and salt. Blend until the mixture is smooth and well combined.

Form the Fish Cakes
With wet hands, take portions of the fish mixture and shape them into small patties or cakes. You should be able to make around 5 fish cakes.

Heat the Oil
In a deep frying pan or wok, heat the oil over medium-high heat until it reaches around 180°C (350°F).

Fry the Fish Cakes
Carefully place the fish cakes into the hot oil, a few at a time, and fry for about 3-4 minutes on each side or until they are golden brown and cooked through.

Drain and Serve
Remove the fish cakes from the oil and drain on paper towels. Serve hot with sweet chili sauce for dipping.
