    Prepare the Brisket

    Trim excess fat off the brisket, leaving about 1/4 inch for flavor. Rinse the brisket under cold water and pat dry.

    Make the Rub

    In a bowl, combine paprika, brown sugar, black pepper, garlic powder, onion powder, salt, and cayenne pepper. Mix well.

    Season the Brisket

    Rub the spice mixture generously over the brisket, ensuring it is evenly coated. Wrap in plastic wrap and refrigerate for at least 4 hours or overnight for best results.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C) using hickory or mesquite wood chips for a classic smoky flavor.

    Smoke the Brisket

    Place the brisket in the smoker, fat side up. Smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Once cooked, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    While the brisket is resting, lightly toast the Rotella kaiser buns on a grill or in the oven.
