Prepare the Ribs
Remove the silver skin from the back of the ribs and trim any excess fat.

Make the BBQ Sauce
In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, paprika, mustard powder, salt, black pepper, and cayenne pepper. Simmer over medium heat for about 15 minutes, stirring occasionally.

Preheat the Smoker
Soak the hickory wood chips in water for 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Ribs
Place the ribs in the smoker and add the soaked hickory wood chips. Smoke for about 3 hours, maintaining a temperature of 225°F (107°C).

Rest and Serve
Remove the ribs from the smoker and let them rest for 10 minutes before slicing and serving.
