Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large bowl.

Season the Wings
Drizzle olive oil over the wings. Add salt, black pepper, garlic powder, smoked paprika, and cayenne pepper. Toss the wings to ensure they are evenly coated with the seasoning.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes before using. Preheat your smoker to 225°F (107°C) and add the soaked wood chips.

Smoke the Wings
Place the seasoned wings in the smoker and close the lid. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

Fry the Wings
After smoking, heat oil in a deep fryer or large pot to 350°F (175°C). Fry the smoked wings in batches for about 5-7 minutes until they are golden brown and crispy.

Serve
Serve the smoked wings hot with additional BBQ sauce on the side for dipping.
