Prepare the Prime Rib
Remove the prime rib from the refrigerator and let it sit at room temperature for about 1 hour. Preheat your smoker to 225°F (107°C).

Season the Meat
In a small bowl, mix together kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub the olive oil over the prime rib, then generously apply the spice mixture all over the meat.

Smoke the Prime Rib
Place the prime rib in the smoker and close the lid. Smoke for approximately 4-6 hours, or until the internal temperature reaches 125°F (52°C) for medium-rare. Use a meat thermometer to check the temperature.

Rest the Meat
Once the prime rib reaches the desired temperature, remove it from the smoker and let it rest for at least 20-30 minutes before slicing.

Serve
Slice the prime rib against the grain and serve with the warm au jus. Horseradish on the side can be offered upon request.
