    Prepare the Tart Crust

    In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

    Pre-bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim excess. Prick the bottom with a fork and bake for 15-20 minutes or until lightly golden. Remove and let cool.

    Prepare Raspberry Filling

    In a saucepan over medium heat, combine 2 cups of fresh raspberries, 2 tablespoons of sugar, and 1 tablespoon of lemon juice. Cook until the raspberries break down and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

    Assemble the Tart

    Spread the raspberry filling evenly over the cooled tart crust. Refrigerate for at least 1 hour to set.
