Prepare the Dough
In a large mixing bowl, dissolve the sugar in warm water and sprinkle the yeast on top. Let it sit for about 5 minutes until foamy. Add the olive oil and salt.

Mix and Knead
Gradually add in the flour, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Let it Rise
Place the dough in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Pretzels
Preheat your oven to 425°F (220°C). Punch down the risen dough and divide it into equal pieces. Roll each piece into a long rope and twist into a pretzel shape.

Boil and Bake
Bring a large pot of water to a boil and add 1/4 cup of baking soda. Boil each pretzel for about 30 seconds, then place them on a greased baking sheet.

Add Toppings
Brush the pretzels with melted garlic butter, and sprinkle with parmesan cheese or kosher salt, depending on your preference.

Bake
Bake in the preheated oven for 12-15 minutes until golden brown.

Serve warm with a side of Mellow red sauce or mustard.
