Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Rub the pork belly with salt and black pepper. Place it in a roasting pan and roast for 2-3 hours until tender.

Make the Garlic Aioli
In a bowl, combine minced garlic, mayonnaise, and lemon juice. Mix well and set aside.

Slice the Pork Belly
Once the pork belly is cooked, let it rest for 15 minutes. Then slice it into 1/2 inch thick pieces.

Assemble the Sliders
On each slider bun, place a slice of pork belly, a handful of spring mix, and a slice of Roma tomato. Top with a dollop of garlic aioli.

Serve
Serve the sliders immediately, 3 per plate.
