Prepare the Tart Crust
In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk and ice water until the dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.

Prepare the Filling
In a bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla extract, and lemon juice. Mix well until creamy.

Prepare the Gelatin
In a small bowl, sprinkle gelatin over 2 tablespoons of water and let it sit for 5 minutes to bloom. Then, gently heat until dissolved.

Assemble the Tart
Spread the cream cheese mixture over the cooled tart shell. Top with pomegranate seeds. Drizzle the dissolved gelatin over the pomegranate seeds.
