Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the butter and powdered sugar until light and fluffy. Add the egg yolks and vanilla, mixing until well combined. Gradually add in the flour until a dough forms. Press the dough into the bottom and up the sides of a tart pan. Prick the bottom with a fork and bake for 15 minutes or until lightly golden.

Prepare the Filling
In a saucepan, combine the crushed pineapple, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring constantly until the mixture thickens and becomes bubbly. Remove from heat.

Assemble and Bake
Pour the pineapple filling into the pre-baked crust and spread it evenly. Bake in the preheated oven for an additional 20-25 minutes, or until the filling is set and the top is slightly golden.

Allow the tart to cool completely before slicing. Serve chilled or at room temperature.
