Prepare the Ingredients
Slice the onion and set aside. Shape the ground beef into two equal patties and season with salt and black pepper.

Sauté the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and sauté until they are golden brown and caramelized, about 8-10 minutes.

Cook the Patties
In the same skillet, add the remaining tablespoon of butter and increase the heat to medium-high. Cook the beef patties for about 4 minutes on one side, then flip and cook for another 3-4 minutes. Place a slice of Swiss cheese on each patty during the last minute of cooking to melt.

Assemble the Patty Melt
Spread Thousand Island dressing on one side of each slice of rye bread. On two slices, layer the cooked patties with melted cheese, followed by the sautéed onions. Top with the remaining slices of bread, dressing side down.

Toast the Sandwich
In the same skillet, cook the assembled sandwiches over medium heat for about 3-4 minutes on each side, or until the bread is toasted and golden brown.

Serve
Remove from the skillet, cut in half if desired, and serve hot with additional Thousand Island dressing on the side.
