Prepare the Noodles
Soak the rice noodles in hot water for about 20-30 minutes until they are soft. Drain and set aside.

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken or shrimp and cook until fully cooked. Remove from the pan and set aside.

Scramble the Eggs
In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the pan and scramble until fully cooked. Remove and set aside.

Combine Ingredients
Add the drained noodles to the skillet. Pour in the soy sauce, tamarind paste, fish sauce, and sugar. Toss to combine everything evenly.

Add Remaining Ingredients
Return the cooked chicken or shrimp to the pan, along with the scrambled eggs, bean sprouts, and chopped green onions. Stir-fry for another 2-3 minutes until everything is heated through.

Serve
Garnish with crushed peanuts on top and serve warm.
