Prepare the Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.

Cook the Shrimp and Vegetables
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook until they turn pink, about 3-4 minutes. Stir in the red and green bell peppers and baby corn. Cook for another 3-5 minutes until the vegetables are tender.

Season the Dish
Add the soy sauce, salt, and black pepper to the shrimp and vegetables. Stir well to combine and cook for an additional 2 minutes.

Serve
Fluff the steamed jasmine rice with a fork and divide it among serving plates. Top with the shrimp and vegetable mixture. Serve with lime wedges on the side.
