Prep the Wings
Preheat your oven to 250°F (120°C). Pat the chicken wings dry with paper towels and place them in a large bowl.

Coat with Seasonings
Add the baking powder, salt, and black pepper to the bowl and toss the wings until they are evenly coated.

First Bake
Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the wings in a single layer on the rack and bake for 30 minutes at 250°F.

Increase Temperature
After 30 minutes, increase the oven temperature to 425°F (220°C) and bake for an additional 40-50 minutes, flipping the wings halfway through, until they are crispy and golden brown.

Toss in Sauce
Remove wings from the oven and toss them in your choice of sauce (hot, BBQ, jerk, sweet Thai chili).

Serve
Serve the wings hot with celery and carrot sticks on the side, along with your choice of ranch or bleu cheese dressing.
