Preheat Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large bowl, whisk together the rolled oats, flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt.

Cream Butter and Sugars
In another bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract.

Combine Mixtures
Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Add Raisins and Nuts
Fold in the raisins and chopped nuts, if using.

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until golden brown.
