Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Dry Ingredients
In a large bowl, combine the rolled oats, all-purpose flour, baking soda, ground cinnamon, and salt. Mix well.

Cream Butter and Sugar
In another bowl, cream together 1 cup of softened butter, 3/4 cup of brown sugar, and 3/4 cup of granulated sugar until light and fluffy.

Add Eggs and Vanilla
Beat in 2 large eggs and 1 tsp of vanilla extract to the butter mixture until well combined.

Combine Mixtures
Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.

Add Optional Ingredients
Fold in 1 cup of chocolate chips and/or 1 cup of chopped nuts if desired.

Scoop and Bake
Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until the edges are golden.

Cool and Serve
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
