Prepare the Mochi Dough
In a large bowl, mix the sweet rice flour, granulated sugar, and water until smooth. Pour the mixture into a microwave-safe bowl.

Cooking the Dough
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then cover and microwave for another 1 minute. Stir again and microwave for a final minute until the dough is sticky and translucent.

Dust and Roll
Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface, dust your hands with cornstarch, and knead the dough for about 2 minutes until it’s smooth. Divide the dough into small pieces, about the size of golf balls.

Assemble the Ice Cream
Flatten each mochi piece in your hands. Place a scoop of vanilla ice cream in the center and a tablespoon of red bean paste on top. Carefully fold the edges of the mochi over the ice cream and pinch to seal.

Freeze
Place the filled mochi balls on a parchment-lined tray and freeze for at least 2 hours or until firm. Optionally, dust with matcha powder before serving.
