Prepare the Ice Cream
Scoop the mango ice cream into small balls and place them on a parchment-lined baking sheet. Freeze the ice cream balls for at least 1-2 hours until firm.

Make the Mochi Dough
In a microwave-safe bowl, whisk together the sweet rice flour, granulated sugar, and water until smooth. Cover the bowl with plastic wrap and microwave in 1-minute intervals, stirring in between, for about 3-4 minutes, until the mixture thickens and becomes slightly translucent.

Dust and Roll the Mochi
Sprinkle a clean surface with cornstarch. Pour the mochi dough onto the surface and let it cool slightly. Dust your hands with cornstarch and divide the mochi into small pieces. Flatten each piece into a circle.

Encase the Ice Cream
Take a frozen ice cream ball and place it in the center of a mochi circle. Gently pinch the edges of the mochi together to seal the ice cream inside. Roll it into a ball shape. Repeat with the remaining ice cream balls.

Final Freeze
Place the finished mochi ice cream balls back on the parchment-lined baking sheet and freeze for another 1-2 hours to firm up.
