    Prepare the Ice Cream Balls

    Scoop out the vanilla ice cream into small balls using an ice cream scoop. Place the scoops on a baking sheet lined with parchment paper and freeze for at least 1 hour until firm.

    Make the Mochi Dough

    In a large mixing bowl, combine sweet rice flour, granulated sugar, and matcha green tea powder. Gradually add water and mix until smooth. The batter should be thick but pourable.

    Cook the Mochi

    Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap. Microwave on high for 1 minute, stir, then microwave for another minute. Stir again and microwave for a final 30 seconds. The mixture should become sticky and slightly translucent.

    Dust with Cornstarch

    On a clean surface, sprinkle cornstarch. Pour the mochi dough onto the cornstarch and dust the top with more cornstarch to prevent sticking. Let it cool for a few minutes.

    Shape the Mochi

    Using a rolling pin, roll out the mochi dough to about 1/4 inch thick. Cut out circles using a cookie cutter or a cup that is slightly larger than the ice cream balls.

    Assemble the Mochi Ice Cream

    Take a mochi circle, place an ice cream ball in the center, and fold the mochi over the ice cream, pinching the edges to seal. Repeat with the remaining dough and ice cream.

    Place the finished mochi ice cream balls back on the parchment-lined baking sheet and freeze for at least 2 hours before serving.
