Cook the Mochi
Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for an additional minute. Stir again and microwave for a final 30 seconds, or until the mixture is sticky and slightly translucent.

Cool the Mochi
Dust a clean surface with cornstarch. Transfer the mochi mixture onto the surface and flatten it with your hands, dusting with more cornstarch to prevent sticking. Allow it to cool for about 10 minutes.

Shape the Ice Cream Balls
While the mochi is cooling, scoop out small balls of ice cream and place them on a tray. Freeze for about 10 minutes to firm up.

Wrap the Ice Cream
Once the mochi is cool, cut it into squares. Place a scoop of ice cream in the center of each square and fold the mochi over the ice cream to enclose it completely. Pinch to seal.

Place the mochi ice cream balls on a tray lined with parchment paper and freeze for at least 2 hours before serving.
