Mango with Sticky Rice

Prepare the Sticky Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-30 minutes until tender.

Make the Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt over medium heat. Stir until the sugar dissolves, but do not let it boil. Reserve a few tablespoons of the coconut sauce for drizzling on top later.

Combine Rice and Coconut Milk
Once the rice is cooked, transfer it to a mixing bowl and pour the remaining coconut sauce over it. Stir gently to combine and let it sit for about 15 minutes to absorb the flavors.

Prepare the Mango
Peel and slice the ripe mangoes into thin strips.

Serve
To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the reserved coconut sauce. Garnish with sesame seeds or mung beans if desired.
