Prepare the crust
Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture into the bottom and up the sides of a 9-inch tart pan. Bake for 8-10 minutes or until golden brown. Let it cool completely.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, lemon juice, and vanilla extract. Mix until well combined and creamy.

Add mango
Peel and dice the ripe mangoes. Gently fold the diced mango into the cream cheese mixture until evenly distributed.

Assemble the tart
Spread the mango cream cheese filling over the cooled crust, smoothing it out with a spatula. Chill the tart in the refrigerator for at least 2 hours to set.

Once set, remove the tart from the refrigerator, garnish with fresh mint leaves, slice, and serve chilled.
