Chicken Marinade and Coating
Method
Preparation and Cooking
- 1
Marinate the Chicken
In a large bowl, combine buttermilk and hot sauce. Add the chicken pieces, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- 2
Prepare the Coating
In a separate bowl, mix together flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper until well combined.
- 3
Dredge the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.
- 4
Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Chicken
Carefully place the coated chicken pieces into the hot oil, working in batches if necessary. Fry for 12-15 minutes, turning occasionally, until golden brown and cooked through. An internal temperature of 165°F (74°C) should be reached.
- 6
Drain and Serve
Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot.
