Dough and Filling

Method

Preparation

  1. 1

    Make the Dough

In a large bowl, combine warm water, milk, sugar, and yeast. Let it sit until foamy, about 5 minutes. Add flour, salt, butter (melted), egg, and vanilla extract. Mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise in a warm place until doubled, about 1 hour.

  3. 3

    Chill the Dough

Once risen, punch down the dough and wrap it in plastic wrap. Refrigerate for at least 2 hours or overnight.

  4. 4

    Shape the Croissants

Roll the chilled dough into a large rectangle. Cut the dough into triangles. Place a small amount of chocolate chips or almond paste on the wide end of each triangle. Roll tightly from the wide end to the point.

  5. 5

    Final Rise

Place the rolled croissants on a baking sheet lined with parchment paper. Cover and let rise until puffy, about 30-45 minutes.

  6. 6

    Bake the Croissants

Preheat the oven to 375°F (190°C). Bake the croissants for 15-20 minutes or until golden brown.

  7. 7

    Cool and Serve

Let the croissants cool on a wire rack for a few minutes before serving. Enjoy fresh!
