Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Cook the Pork
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the minced pork and cook until browned and cooked through. Remove from the pan and set aside.

Make the Fried Rice
In the same skillet, add the remaining tablespoon of oil and sauté the shallots until translucent. Stir in the shrimp paste and cook for 1-2 minutes until fragrant. Add the cooked jasmine rice to the skillet, along with the soy sauce, sugar, and salt. Stir well to combine and cook for another 5 minutes.

Serve
Transfer the fried rice to a serving platter. Top with the cooked pork, julienned green mango, and fresh chili slices. Serve with lime wedges on the side.
