    Wash and scrub the russet potatoes thoroughly. Slice them thinly (about 1/8 inch thick) using a mandoline or a sharp knife.

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towel. Pat them dry to remove as much moisture as possible.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). You can test the temperature by dropping in a slice of potato; it should sizzle immediately.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.

    Once the chips are done frying, remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and any additional seasonings you like.
