Place the pork belly in a pot and cover it with water. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes.

After simmering, add palm sugar, soy sauce, fish sauce, minced garlic, black pepper, and chopped coriander roots to the pot. Stir well and simmer for another 30 minutes until the pork is tender and flavorful.

Remove the pork from the pot and let it cool. Once cooled, slice the pork belly into thin pieces. Heat a pan over medium heat and fry the pork slices until they are crispy and golden brown on both sides.

Arrange the crispy pork on a plate. Top with crispy fried garlic, chili flakes, and garnish with cucumber and fresh cilantro. Serve with a dipping sauce if desired.
