    Prepare the Salmon

    Season the salmon fillets with salt, pepper, and your choice of spices. Grill or pan-sear them on medium heat for about 4-5 minutes on each side or until cooked through. Remove from heat and let them rest.

    Prepare the Vegetables

    While the salmon is cooking, dice the cucumber, red onion, and mango. Chop the green onions and set all the vegetables aside in a bowl. Add the shelled edamame to the bowl as well.

    Make the Sriracha Aioli

    In a small bowl, mix together 1/2 cup of mayonnaise, 2 tablespoons of sriracha, and a squeeze of lime juice. Adjust the spiciness to taste.

    Assemble the Dish

    On a serving plate, place the cooked salmon fillets. Top with the mixed vegetables and mango. Drizzle ponzu sauce over the top and finish with a generous amount of sriracha aioli.

    Sprinkle the potato chips over the dish for added crunch and texture.
