    Prepare the Mushroom Filling

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Onions

    Add sliced onions to the skillet and cook until caramelized, about 10-15 minutes, stirring occasionally.

    Add the Mushrooms

    Stir in the shiitake, button, and portobello mushrooms. Cook for an additional 8-10 minutes until mushrooms are soft and any moisture has evaporated. Season with salt and pepper to taste.

    Assemble the Pie

    Preheat the oven to 400°F (200°C). Spread the mushroom mixture evenly in a pie crust (store-bought or homemade). Sprinkle mozzarella and MontAmoré® cheese over the top.

    Bake

    Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden.

    Finish with Aioli and Truffle Oil

    Remove the pie from the oven. Drizzle garlic aioli in a swirl pattern over the top, then lightly spritz with black truffle oil.
